A really good lunch...

Black Bean Burrito
Serving Size : 1
Ingredients
· 1/2 cup black beans, canned, low-sodium
· 1/2 tomato, medium
· 1/4 bell pepper, green, medium
· 1 1/2 teaspoons olive oil, extra virgin
· 1 teaspoon cilantro, fresh
· 1 tortilla, whole wheat
· 1/2 ounce cheddar cheese, low-fat
· 2 tablespoons salsa
· 2 tablespoons sour cream, fat-free
Preparation
· Drain and rinse black beans. Wash and chop tomato and bell pepper.
· In a small bowl, combine black beans, tomato, bell pepper, olive oil, and cilantro (chopped). Mix lightly.
(I cooked these in a skillet and added a little green onion)(I used 2 small tortillas instead of 1 big one)
· Spoon black bean mixture onto tortilla; top with cheese, salsa and sour cream.
· Roll up tortilla and enjoy with a glass of cold water or other calorie-free, decaffeinated beverage.
